Over the past few months, with the rise of the West Coast Pale again, the conversation has been touching on the clarity of the beer. After a night out with our friends down South at Gipsy Hill, we came up with a plan to make quite similar beers but the only difference would be it’s clarity from the speciality malts.
We both agreed on Centennial and Mandarina Bavaria hops, 5.2%, and to keep the rest simple.
We picked cloudy, so obviously haze heavy pale ale came to mind, with oats and wheat in the mash to keep it ‘London Murky’. We didn’t want it to become a New England style so picked a clean yeast and gave it a balanced bitterness. We were joined at the brew day by Sam and the following day Steve and I headed south for the return leg.
Gipsy Hill had clear and decided on a dry hopped Lager. The clearest of all beer styles. We’re very much looking forward to tasting them side by side.
