IMPERIAL COFFEE STOUT
Stats: 14.0% ABV. 40 IBU. 80 EBC. OG 1.130.
Hops: Magnum, Coffee.
Malt: Best Ale, Roasted Barley, Crystal 120, Chocolate Malt, Dextrin, Flaked Oats, Wheat.
Format: Keg, Can.
Tasting notes: Coffee, Rich, Dark.
Early this year I was lucky enough to get to meet Jeppe from Evil Twin and get shown around his new facility in New York City.
As part of the Skyline Project we were paired to create, in true Evil Twin spirit, a huge imperial stout! Three mashes worth of grain (1500Kg), a 22 hour boil and a mountain of fresh locally roasted coffee from Climpson & Sons roasters. We’ve created a 14% thick, rich, sweet, coffee infused stout.
The brief of the project was an intentionally open and vague theme of New York. During tour of their new brewing facilities, we were shown their barrel store that contained the original hotel sign from Twin Peaks. I’m a big fan of the David Lynch classic. Some of the running themes are references to coffee and the phrase “the owls are not what they seem”.
Nothing pairs quite so effortlessly to big stouts like coffee and after last years “Underground” coffee sour we were keen to use coffee in beer again. I was thinking of those classic scenes from Twin Peaks in the Diner whilst over in Manhattan and was reminded of Edward Hoppers, classic Nighthawks. Nothing was quite so “New York” than a late night coffee in a diner. It felt like an effortless creation, everything just fell into place.
Jeppe and I scaled up and developed the recipe based on our series of 8% barrel aged stouts from a few years ago. Piecing something together that would sit well with coffee and be big enough to make an impression!
Pete Fowler worked his magic on the Hopper classic and it really feels like there is some magic in this can.
Really proud to have been a part of the London Brewing scene with this project, everyone has come together to make something exciting. With big names in the project, we hope that we’ve all made new friends and been able to create some really special beers.
